Nuestro Smoked Star Anise proviene de las montañas de Lang Son, al noreste de Vietnam, cerca de la frontera con China. Allí, miembros de la comunidad Muong cultivan y cosechan a mano estos frutos de anís estrella en una región fría y montañosa.

Durante la cosecha de invierno, el clima frío y nublado hace que los frutos necesiten secarse en estructuras cercanas al fuego de leña. Ese proceso les aporta un delicado ahumado antes de completar su secado al sol, creando un anís estrella mucho más complejo que el convencional.

Su característico dulzor a regaliz aparece primero, seguido por humo de madera y una inesperada nota de fruta ácida. Es intenso y fragante, perfecto para aportar profundidad tanto a preparaciones saladas como dulces.

Una especia familiar con una dimensión completamente nueva.

Proceso: Secado sobre fuego y posteriormente al sol

Consejos de uso

  • Añade uno o varios pétalos a caldos, sopas, estofados y carnes braseadas.
  • Agrega 1–2 estrellas al agua al preparar arroz para perfumarlo durante la cocción.
  • Combina con canela, clavo y jengibre en tés y bebidas calientes.
  • Úsalo para aromatizar peras y otras frutas cocidas.
  • Muélelo y añade una pequeña cantidad a cookies, bizcochos y otros postres.
  • Úsalo entero para infusionar y retíralo antes de servir.

Smoky, sweet, and deeply aromatic.

Our Smoked Star Anise comes from the mountains of Lang Son in northeastern Vietnam, near the Chinese border. There, members of the Muong community grow and hand-pick these star anise fruits in the cool mountainous region.

During the winter harvest, cold and cloudy conditions require the fruits to dry on racks near a wood fire. They naturally pick up a delicate smoky character before finishing their drying in the sun, creating a star anise with significantly more complexity than conventional varieties.

Its characteristic licorice sweetness comes first, followed by woodsmoke and an unexpected note of tart fruit. Intensely fragrant and complex, it brings remarkable depth to both savory and sweet preparations.

A familiar spice with an entirely new dimension.

Process: Dried over a fire, then sun-dried

Cooking Tips

  • Add a few petals to homemade stocks, broths, braises, and stews.
  • Add 1–2 whole stars to rice after adding the cooking water.
  • Pair with cinnamon, cloves, and ginger in teas and warm drinks.
  • Use to infuse poached pears and other cooked fruits.
  • Grind and add a small amount to cookies, cakes, and other baked goods.
  • Use whole for infusions and remove before serving
